This is my first post in my new blog! I am excited to share any and all info and tips I find helpful in my journey to a gluten free life!
Just a little background on us.....My husband, Jake, was sick for 7.5 years and with MANY MANY visits in out of doctors offices and hospitals he was diagnosed with cyclic vomiting syndrome. They treated this like it was the disease and we refused to accept that! Well..... recently he got much worse and was very ill. He was finally diagnosed with a REAL disease! He has Celiac Disease, which we now know is an auto-immune disease. His body can not handle gluten. If he ingest gluten then it will cause damage to his intestines every time! This is a LIFE long change and though it will not be easy...We look forward to helping him get better and hopefully stay better.
As of right now he has a severe intestinal infection, a failing pancreas and colitis among many other deficiencies and the inability to really eat. He has lost down from 210lbs to 188lbs in less than a month from his body not absorbing nutrition properly and also from constant daily vomiting. We will be working very hard to clear the house of all things gluten and hopefully get him back on track!
About the kiddos - We have two children, Blake and Hailey They are almost 8 & 6. My son does show signs of possible celiac disease and we plan to have him tested. As of now the entire family has decided to go gluten free and we all seem to be doing better with it. I thought the kids would struggle with the change but they really have not struggled much at all! Actually, they are super supportive and happy to do anything we can to make daddy feel better! :) My son had food sensitivities as a baby and toddler. He could not eat tomatoes, strawberries and raspberries. We THOUGHT it went away but nope...It came back this year! So..we try to avoid those things too. :)
About Me- I am 30 yrs old this year and I am very happy with the knowledge I now have about food! When I was younger I ate mostly healthy but I did enjoy fast food and skipping MANY meals. I was very thin and then I got pregnant! I had to complicated pregnancies and ended up on bed rest which led to 90 lbs of weight gain. I have struggled for several years to lose the weight. I made slow changes but little by little they have all seemed to work! I was a BIG believer in Whole Wheat and Whole Grains! Now that I know how it affects my family....I have changed my way of thinking. I do feel that as of now it is hard to eat real healthy since I do NOT know how to bake gluten free yet BUT I plan to bring you along on my journey. :) So we can learn together! I am only 10lbs from my pre-baby weight and I have no doubt it will come off nautrally. :)
